Chocolate Making – IBT Teachers Training

Introduction

As part of an IBT Teachers Training, I was given a task to teach the teachers how to make chocolates. I prepared chocolates and explained the complete process, starting from measuring the ingredients to moulding, freezing and packing.

Objective

  • To learn and demonstrate chocolate making.
  • To teach the teachers the basic process of making chocolates.
  • To understand the use of chocolate compound, dry fruits and food colour.
  • To calculate the cost of making chocolates.

Making Process

1. Measuring the Materials

First, I measured the required quantity of chocolate compound and dry fruits.

2. Preparing the Chocolate

Then, I grated the chocolate compound into small pieces and melted it properly using the double-boiling method.

3. Adding Ingredients

After the compound was melted, I added the required dry fruits and food colour and mixed them properly.

4. Filling the Moulds

The prepared chocolate mixture was transferred into silicone moulds carefully.

5. Freezing

The filled moulds were kept in a deep freezer until the chocolates became hard and properly set.

6. Demoulding and Packing

After the chocolates were set, I removed them from the silicone moulds and packed them using wrappers.

Costing

The total material cost was ₹487.84.

Labour charge = 35% = ₹170.74

Total Cost = ₹487.84 + ₹170.74 = ₹658.58

A total of 125 chocolates were made.

Cost per chocolate = ₹658.58 ÷ 125 = ₹5.26 approximately

Result

We successfully made 125 chocolates using chocolate compound, dry fruits and food colour. I also learned the complete process from measuring the materials to melting, moulding, freezing, demoulding and packing. I learned how costing helps to calculate the approximate cost of each chocolate.
